Ingredients
– 4 large russet potatoes
– 1 cup full-fat sour cream
– 1 cup shredded cheddar cheese (plus extra for topping)

– Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C). Wash the russet potatoes and prick them with a fork.
2. Bake the potatoes on the oven rack for 45-60 minutes until tender. Let cool slightly.
3. Cut off the tops of the potatoes and scoop out the insides into a bowl, keeping the skins intact.
