Ingredients

– Large flour or corn tortillas

– Crumbled feta cheese

– Fresh spinach

– Sliced Kalamata olives

– Bell peppers (red or yellow)

– Thinly sliced red onion

– Olive oil


Instructions

1. Gather all ingredients; wash spinach and slice vegetables.

2. Heat a skillet over medium heat and add olive oil.

3. Place one tortilla in the skillet, layering half with spinach, feta, olives, bell peppers, and onion.

4. Fold the tortilla in half and cook until golden brown (about 3 minutes). Flip carefully and cook for another 2 minutes until crispy.
