Ingredients

– 6 cups day-old French bread or brioche

– 3 ripe bananas

– 4 large eggs

– 2 cups heavy cream (or half-and-half)

– 1 cup dark brown sugar

– 1 teaspoon ground cinnamon

– 1 teaspoon vanilla extract

– For the sauce: ½ cup unsalted butter, 1 cup brown sugar, and a dash of cinnamon

Instructions

1. Preheat oven to 350°F (175°C). Grease a baking dish.

2. Cube the bread and place it in the dish.

3. Whisk eggs, cream, brown sugar, cinnamon, and vanilla in a bowl; pour over bread.

4. Fold in sliced bananas gently.

5. Cover with foil and bake for 30 minutes; uncover and bake for an additional 15-20 minutes until golden.

6. For the sauce, melt butter in a saucepan, stir in brown sugar and cinnamon until syrupy.

Notes

– Stale bread absorbs more custard without becoming soggy.

– Add nuts like pecans for added texture.
