Easy Copycat Grilled Chipotle Chicken Recipe

  • 4 chicken breasts or thighs (about 1.5 lbs)
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tablespoons adobo sauce (from the chipotle peppers can)
  • 4 cloves garlic, minced
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon honey (optional, for balance)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Prepare the Marinade: In a bowl, combine the chipotle peppers, adobo sauce, garlic, lime juice, olive oil, honey (if using), salt, and pepper. Mix well.
  2. Marinate the Chicken: Place the chicken in a large resealable bag. Pour the marinade over the chicken, ensuring it’s fully coated. Seal the bag and refrigerate for at least 4 hours, or overnight.
  3. Preheat the Grill: Heat your grill to a medium-high temperature.
  4. Grill the Chicken: Remove the chicken from the marinade, letting the excess drip off. Grill each side for about 6-7 minutes or until the internal temperature reaches 165°F (74°C).
  5. Rest and Serve: Let the chicken rest for a few minutes before serving. Garnish with fresh cilantro if desired.
