  • 4 boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups queso dip (store-bought or homemade)
  • 1 can (10 oz) diced tomatoes with green chiles, drained
  • 1 cup canned corn kernels, drained
  • 1 cup canned black beans, drained and rinsed
  • Fresh cilantro or green onions, chopped (for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Season Chicken: In a small bowl, combine chili powder, cumin, garlic powder, salt, and pepper. Sprinkle this seasoning mix evenly over both sides of the chicken breasts.
  3. Prepare Baking Dish: Arrange the seasoned chicken breasts in a single layer in a 9×13-inch baking dish.
  4. Add Queso and Vegetables: Pour the queso dip over the chicken, ensuring each breast is well coated. Sprinkle the drained diced tomatoes, corn, and black beans over the top.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Optional Browning: For a golden, bubbly top, remove the foil during the last 5 minutes of baking and switch the oven to broil. Watch closely to prevent burning.
  7. Garnish and Serve: Once baked, remove the dish from the oven and let it rest for a few minutes. Garnish with chopped fresh cilantro or green onions before serving.
