- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs, room temperature

- 1/2 cup whole milk, room temperature
- 1/4 cup sour cream, room temperature
- 1/2 cup rainbow sprinkles (jimmies or confetti sprinkles)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with muffin liners.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the milk and sour cream, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in Sprinkles: Gently fold in the sprinkles, being careful not to overmix.
- Fill Muffin Liners: Divide the batter evenly among the muffin liners, filling each about 2/3 full.
- Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
