Delicious Breakfast Eggy Crumpets Recipe

  • 4 crumpets
  • 4 large eggs
  • 1/2 cup milk
  • 2 serrano peppers, finely chopped
  • Salt and pepper to taste
  • 4 slices of bacon
  • 4 slices of habanero cheese
  • Optional garnishes: chopped chives, additional serrano pepper slices

Instructions

  1. In a bowl, whisk together eggs, milk, chopped serrano peppers, salt, and pepper.
  2. Soak the crumpets in the egg mixture for about 1 minute on each side.
  3. Cook bacon in a skillet until crispy. Remove and set aside, keeping the bacon grease hot.
  4. Place the crumpets top-side down in the hot bacon grease, and cook for 3-4 minutes until golden.
  5. Flip the crumpets, immediately top with bacon and a slice of habanero cheese.
  6. Spoon some hot bacon grease over the cheese to help it melt completely.
  7. Once the bottom is golden and the cheese has melted, serve with your chosen garnishes.
