- 4 crumpets
- 4 large eggs
- 1/2 cup milk
- 2 serrano peppers, finely chopped
- Salt and pepper to taste
- 4 slices of bacon
- 4 slices of habanero cheese
- Optional garnishes: chopped chives, additional serrano pepper slices
Instructions
- In a bowl, whisk together eggs, milk, chopped serrano peppers, salt, and pepper.
- Soak the crumpets in the egg mixture for about 1 minute on each side.
- Cook bacon in a skillet until crispy. Remove and set aside, keeping the bacon grease hot.
- Place the crumpets top-side down in the hot bacon grease, and cook for 3-4 minutes until golden.
- Flip the crumpets, immediately top with bacon and a slice of habanero cheese.
- Spoon some hot bacon grease over the cheese to help it melt completely.
- Once the bottom is golden and the cheese has melted, serve with your chosen garnishes.
