Chorizo Grilled Cheese

Ingredients

  • 4 slices sourdough bread
  • 1 tablespoon butter, for grilling
  • 4 slices cheddar cheese
  • 1/2 cup cooked chorizo, crumbled
  • 4 slices cooked bacon
  • 1 ripe avocado, sliced
  • Optional: mayonnaise or mustard for spreading

Instructions

  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. On the non-buttered sides, layer one slice of cheese, half the chorizo, two slices of bacon, several slices of avocado, another slice of cheese, and top with another slice of bread, butter side up.
  4. Grill each sandwich for about 3-5 minutes on each side, or until the bread is golden brown and the cheese has melted.
  5. Slice diagonally and serve immediately.
