- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Zest of 1 lime
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold milk
- 1 cup fresh blackberries
- 1 egg, beaten (for egg wash)
- Additional sugar for sprinkling
Instructions
- Preheat Oven & Prepare Pan: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and lime zest.
- Cut in Butter: Using a pastry blender or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add Milk: Gradually add the milk, stirring until just combined. Do not overmix.
- Fold in Blackberries: Gently fold in the blackberries, trying to minimize breaking them.
- Shape Dough: Turn the dough out onto a floured surface. Gently pat into a round disk, about 1 inch thick. Use a sharp knife to cut into 8 wedges.
- Bake: Place the scones on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with a little sugar. Bake for 20-25 minutes, until golden brown.
- Cool & Serve: Let the scones cool on a wire rack for a few minutes before serving.
