Blackberry Lime Scones

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold milk
  • 1 cup fresh blackberries
  • 1 egg, beaten (for egg wash)
  • Additional sugar for sprinkling

Instructions

  1. Preheat Oven & Prepare Pan: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and lime zest.
  3. Cut in Butter: Using a pastry blender or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Add Milk: Gradually add the milk, stirring until just combined. Do not overmix.
  5. Fold in Blackberries: Gently fold in the blackberries, trying to minimize breaking them.
  6. Shape Dough: Turn the dough out onto a floured surface. Gently pat into a round disk, about 1 inch thick. Use a sharp knife to cut into 8 wedges.
  7. Bake: Place the scones on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with a little sugar. Bake for 20-25 minutes, until golden brown.
  8. Cool & Serve: Let the scones cool on a wire rack for a few minutes before serving.
